The ingredient lists might be simple but the flavors are anything but at The Publican. Backed by local legend Chef Paul Kahan, this "beer-focused" restaurant is designed to resemble a European beer hall and serves up simple fare that wouldn't feel out of place on a countryside farm. The menu mostly focuses on pork and seafood, with items sorted into Fish, Meat, and Vegetable sections. All the pork is certified organic and sourced from Dyersville, Iowa, and many of the meat cuts are available from the next-door butcher shop. Of course, it doesn't just look like a beer hall — the beer and wine list is quite impressive, and all servers, bartenders, and managers are certified beer servers, making them perfectly capable of helping you find a selection you'll love.
