When it comes to food, you don't always need a huge menu to be successful — you just need to find something simple you're good at and perfect it. That's exactly what's happened at Parm. This smallish Nolita establishment specializes in chicken, eggplant, and meatball parmigiana sandwiches and platters, with the latter made in-house from veal, beef, and sweet Italian sausage. Nightly specials offer diners a more upscale option, but if you want to experience Parm the right way, you want one of the sandwiches that arrives in a red plastic basket, served up by a chef with a white paper hat. Like we said — simple, but good.
