It may have started life in 2009 as a food truck — a 1962 Airstream Tradewind-based food truck, but still — but the food at Spork remains just as tasty as it was when it came to you, as opposed to you going to it. Informed by goals of locally-sourced, humanely-raised and -grown ingredients, the menu spans the globe, including everything from chilaquiles and tacos to Peruvian stir-fry and coconut green curry. Of course, there are benefits to a brick and mortar location beyond seating and protection from the weather, including a full bar offering up classic cocktails, draft beers, and an expanded selection of non-alcoholic beverages.
